FSANZ Food Standards Code – Food Safety Standard 3.2.3 Food Premises and Equipment provides mandatory, outcome based fitout requirements that all Australian food premises must meet.
The Australian Standard 4674 Design, Construction and Fitout of Food Premises provides prescriptive advice on the construction and fitout of food premises. Most Local Government Authorities require compliance to this standard.
If you have a GFSI certified food safety system, there will be specific construction and fit out requirements that must be met. In particular, there are specific requirements for the high-care and high-risk production zones.
There are many other Australian Standards and specific industry requirements that may also be relevant depending on your operation. Some examples include AS 1668 Mechanical ventilation in buildings and the EHEDG Guidelines – Hygienic Design Principles.
You may need different production zones within your facility for food handling activities at different risks of environmental contamination.
